Dotter has a 1985 access cab 4 cyl truck... engine/trans is "sweet", but body is "sour". Are there options out there to put a better body on the good chassis?

As far as the front end parts go, you could prob find new parts online, the hardest part will be finding a bed in good shape if you need one, most of the mid 80's trucks had rust problems, I'm not sure if it'll fit without modification, but you could check on putting a bed off a early 90's truck instead, the bed style didn't change much and they didn't have the rust problems.
