It's really jut a problem if you think of it too much. Driving around the city will really have the camry shifting a lot. But think of it this way: when you're on the 6th gear and you came to a stop, and a truck is right behind you and you try to speed up. It takes a quite some time for the car to speed up from a total top in 6th gear. What happens in the Camry is that it shifts down quite a lot so you could speed up in such situations.
If you don't mind doing 20mph on the 6th gear, then you can do without the transmission shifting down. It's actually an economical feature too, a mechanic told me.

It's really like that. Maybe after the next 500 or so miles, it'll smoothen up and you'll get used to it. The camry is actually learning how you drive. It adjusts to your driving preferences. Atleast that's what I sense between my own Camry and a friend's. He drives his car on the highway, and I usually just take it through the city to work. Mine shifts up and down quite alot and the accelerator is responsive. As for my friend's camry, he doesn't have the shifting problems, but has a little delay on the accelerator.

Just keep driving it in. A few more miles on that odometer and it will shift up and down smoothly.
